I learned how to cook fideo while in high school, from a friend’s mom. Over the years I’ve modified it quite a bit but the essence is still the same. My fideo goes something like this:
Ingredients
- 1 box of vermicelli (I prefer Q & Q Original Fideo Vermicelli, 5 oz, that runs about $0.20)
- 2 cans of tomatoes & green chiles (original Rotel works the best for me, but I’ve tried many products and most work fine)
- 1/2 bag of fake meat (or 1/2 lb ground beef)
- Optional ingredients
- 1 can of corn
- 1/2 onion (diced)
- 2 serrano peppers (sliced)
- 1 garlic clove (diced)
- sliced avocado
Preparation
- Saute the vermicelli and meat (+ corn, onion, serranos, garlic) in hot skillet w/a little cooking oil
- When noodles become nicely toasted, pour in the 2 cans of tomatoes & green chiles + 1 can full of water
- Cook until water has evaporated and texture becomes a bit sticky (I like to ‘sear’ the bottom to give the dish some crunchy texture)
Surprisingly, this is tasty when served with sliced canned beets. Freshen it up a bit by laying some avocado slices on top. You can also top your plate with tortilla chips and use fideo as a “dip.”
